The economy at the moment is causing alot of stress lately…
Especially managing for on a budget with a family.
Lately I couldn’t handle making food on the weekday, and cooking dinner after work. It was getting too much and I have been getting too much burnout.
So I finally decided to just pick 2 staples and just alternate them during the week to save on time, money and have some ease in the week. This can work for 4-5 days for lunch and add as some leftover dinner.
I got a rare free Sunday today just to focus on meal prep.
What I Chose
- Brown Rice
- Frozen Mixed Vegetables
- Sweet Potatoes
- Pasta
What I Decided to Make
- Rice bowls (brown rice + potatoes + veggies + chicken)
- Pasta mixed meals (rose pasta + potatoes + chicken)
They go well with a good seasoning of spices. A suggestion is to use salt and black pepper at first, then add some unique spices such as:
- Paprika
- Onion Powder
- Garlic Powder
With making roasted mixed vegetables and sweet potatoes, it creates two good side dishes to mix and match with a great protein like chicken.
I am beginner, so I am still learning good meal prep idea and got the idea from many captions.
I always try to do too much with cooking since I like something different each day. But I have learned to stop, slow down and see what I can handle. When I learn more, I can add gradually but keeping to a limit and substituting a meal out.
